Vegan Salchipapas (Peruvian Sausage & Fries)

Take a look at our vegan take on a traditional Peruvian Salchipapa (sausage and potatoes), smothered in a Peruvian favourite, Aji Chilli Sauce.

  • 3 large potatoes sliced into fries
  • 4 large vegan hot dogs/weiners
  • 1 tbsp fresh parsley for garnishing
  • 1 tbsp olive oil
  • 1 serving Aji Chilli Sauce (see recipe notes)


  1. Wash and slice your potatoes in to thin fries (peel if you prefer your fries to be skinless). Cover with a bit of olive oil and seasonings (if desired).

  2. Place in a pre-heated oven on Gas Mark 7 (425 degrees F / 220 degrees C) and cook for 35 minutes (or until they look done!). 

  3. Slice your weiners into 2 inch slices. Add olive oil to a frying pan and cook your sausages for around 7 minutes, turning frequently.

  4. Add your cooked fries to the pan and mix it all up until combined well with the sausages. 

  5. Garnish with fresh parsley, Aji chilli sauce and serve!

Recipe Notes

  • Salchipapas is often served alongside ketchup, mayo, mustard and aji chilli sauce - feel free to do the same!
