Take a look at our vegan take on a traditional Peruvian Salchipapa (sausage and potatoes), smothered in a Peruvian favourite, Aji Chilli Sauce.
Wash and slice your potatoes in to thin fries (peel if you prefer your fries to be skinless). Cover with a bit of olive oil and seasonings (if desired).
Place in a pre-heated oven on Gas Mark 7 (425 degrees F / 220 degrees C) and cook for 35 minutes (or until they look done!).
Slice your weiners into 2 inch slices. Add olive oil to a frying pan and cook your sausages for around 7 minutes, turning frequently.
Add your cooked fries to the pan and mix it all up until combined well with the sausages.
Garnish with fresh parsley, Aji chilli sauce and serve!
