Wild Rice Pilaf is a wonderful vegan rice dish from Ethiopia that is packed with flavour, spice and true African spirit. Serve along side your favourite Ethiopian lentil stew or side dishes.
Firstly, cook your wild rice for the desired time (usually 25-30 mins).
In a separate saucepan, cook your aduki beans (see packet for details).
Place your niter kibbeh in a saucepan. Once it starts to melt, add in your leaks and saute on a medium heat for 10 minutes.
Add garlic and cook for a further 2 minutes.
Add Berbere spice and cook for another minute.
Stir in your cooked rice, beans and orange zest. Mix well and season as desired
Top with spring onions, you're ready to eat!
