Bhuna Khichuri (Bangladeshi Vegetable Rice)
I don’t think any dish would be complete without rice, veggies and spice – this bangladeshi vegetable rice recipe (or Bhuna Khirchuri) will not disappoint!
It doesn’t require much skill to make but the aromas and flavours in this dish will certainly impress your dinner guests.
Serve with a traditional red lentil dal or a similar vegan curry. Maybe with some starters or naan if you’re feeling hungry!

Bhuna Kichari is a wonderful rice dish packed with protein which includes mung beans and cauliflower - all the good stuff!
- 1 cup basmati rice
- 2 tbsp olive oil / vegetable oil
- 1/2 cup caulifower chopped
- 1 large potato peeled and cubed
- 1/4 cup mung beans
- 1/2 white onion roughly chopped
- 1 green chilli seeded and finely chopped
- 1/4 tsp ginger
- 1/8 tsp garlic powder
- 1/8 tsp cumin
- 1/8 teaspoon ground coriander
- 1/4 tsp turmeric
Firstly, cook the mung beans on a medium heat in 1/2 cup water for 10 minutes.
Add 1 tbsp of oil to a pan and fry the cubed potato and cauliflower. After 5 mins, add the onion, green chilli and spices.
Add your basmati rice, cooked mung beans and around 1/2 cup of the oil and stir until well combined.
Now add 2 cups of water and bring to the boil. Reduce to a very low simmer and cover the pot for exactly 18 minutes (that's how you get it perfect!).
Decorate with green chilli's and chilli powder (if you like it extra hot!).
