  • 1/2 cup caulifower chopped
  • 1 large potato peeled and cubed
  • 1/4 cup mung beans
  • 1/2 white onion roughly chopped

  • 1 green chilli seeded and finely chopped
  • 1/4 tsp ginger
  • 1/8 tsp garlic powder
  • 1/8 tsp cumin
  • 1/8 teaspoon ground coriander
  • 1/4 tsp turmeric

  1. Firstly, cook the mung beans on a medium heat in 1/2 cup water for 10 minutes.

  2. Add 1 tbsp of oil to a pan and fry the cubed potato and cauliflower. After 5 mins, add the onion, green chilli and spices.

  3. Add your basmati rice, cooked mung beans and around 1/2 cup of the oil and stir until well combined.

  4. Now add 2 cups of water and bring to the boil. Reduce to a very low simmer and cover the pot for exactly 18 minutes (that's how you get it perfect!).

  5. Decorate with green chilli's and chilli powder (if you like it extra hot!).
