West African Peanut Soup

According to sources online, it was originally a Malian recipe known as Maafe (peanut butter sauce) and ever since, neighbouring countries have taken influence from the original recipe and added their own subtle touches to it (ever since the 1800’s!).
It’s centuries old and now we know why, it it simply delightful and so easy to re-create.

West African Peanut Soup
West African Peanut Soup (also referred to as a stew) dates back to the 18th century in Mali and ever since has been re-created by many West African countries. It's vegan and gluten free.
Ingredients
Vegetables
- 2 carrots
- 1 sweet potato
- 1 yellow pepper
- 2 white onions
- 4 tomatoes
- 3 spring onions
Spices & Sauces
- 2 garlic cloves
- 1 tbsp fresh ginger
- 2 green chillis
- 1 tbsp brown sugar
- 1/2 cup peanut butter
- 3 cups vegan broth
- 1 tsp salt
- 1 tsp pepper
Instructions

Roughly chop all vegetables, garlic and ginger.

Add your tomatoes to a food processor and blitz until a juice is formed. Pour into a seperate bowl.

Saute your white onions, carrots, pepper, garlic, ginger and chillis in an oiled pan for 5 minutes.

Add sweet potato, vegan broth and bring to the boil. Once boiling, simmer for 10 minutes.

Add all ingredients from your pan to a food processor and blitz until smooth.

Return mixture to your pan and add your tomato juice from earlier and peanut butter. Mix well.

Season with salt and pepper and garnish with your spring onions.
Recipe Notes
- If you prefer your soup to be thinner in texture, add more water when adding your tomato juice and peanut butter.
We just made this for dinner and it was amazing!! The spring onion was perfect as a garnish. I added the peanut butter a little at a time so I don’t know if I used the exact amount in the recipe but it turned out super delicious. Thank you!
