Cambodian Cucumber Side
Cucumber salad is a refreshing side dish, particularly when eating spicy Cambodian food!

Ingredients
- 1 cucumber medium sized
- 1 tsp sugar
- 1 tsp salt
- 1 garlic clove minced
- 3 tbsp soy sauce/tamari
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1/2 tsp chill flakes (optional)
Instructions

Wash your cucumber, slice length ways and then into 1/2 pieces.

Mix the remaining ingredients in a bowl.

Add the cucumber slices and cover well with the marinade.

Chill in the fridge for a minimum of 1 hour before serving.
This was a lovely little side dish to go with a spicy curry, helped to cool my mouth down! Highly recommend giving this a try, very easy to make also which is a bonus.
